Drumstick and Onion Soup
Ingredients
Drumsticks – 3
Medium sized onion – 1
Ghee – 1 tbsp
Cumin seeds
Method
1)
Chop the drumsticks into finger length pieces
and boil in water till they soften.
2)
Cool and slice the drumstick pieces longitudinally
to scoop out the pulp using the thumb.
3)
Keep aside the boiled water to use as stock.
4)
Chop the onions fine and sauté them in ghee
after adding a pinch of cumin seeds.
5)
After the onions have turned golden brown add the
drumstick pulp and mix rapidly for 30 seconds.
6)
Allow the mixture to cool before pureeing it in
a blender, typically for a minute.
7)
Transfer the stock from above to the pan and add
the puree to it. Mix well and bring it to a boil and allow it to simmer for 30
seconds. Add salt to taste.
8)
Serve hot without any garnish.
Notes
1)
This is a soup of comfort and well-being and do not overwhelm
it with spices or garnish. Soak in the gentle aroma and mouthfeel of
drumsticks.
